- 1 tsp Le Petit Mas fermented garlic flowers
- ¼ cup plain breadcrumbs
- ¼ cup mayonnaise
- 1 tsp Dijon mustard
- ¼ cup Parmesan cheese
- Salt and pepper
- 800 g fresh salmon fillet
Preheat oven to 400°F (200°C).
In a bowl, combine fermented garlic flowers, mayonnaise and mustard.
Oil a baking sheet with some olive oil and place salmon fillet on it. Spread garlic scape mayonnaise on fish. Sprinkle breadcrumbs on mayonnaise.
Top breadcrumbs with Parmesan, salt and pepper, to taste.
Bake in the oven for about 20 minutes or until the crust is golden-brown and the fish is cooked through.
Serve immediately with rise, pasta, a salad or seasonal vegetables.
