  • Preparation

  • Break garlic bulbs apart (don’t remove the skin from cloves).

  • Put garlic cloves in a pot. Add olive oil until it just covers cloves.

  • Simmer on low heat for 1 hour.

  • Remove garlic cloves from oil by straining through a colander or sieve or by using a slotted spoon.

  • You now have two options:

  • 1- Serve as is: leave garlic confit whole and serve in a bowl or directly on serving plates. 

  • 2- Crush each clove to remove garlic purée. Combine with mashed potatoes or spread on bread or meat.

    Store garlic confit whole or as a purée for several days in the fridge or freeze it for future use!
