- 500 g Le Petit Mas Music garlic
- 350 ml olive oil
Break garlic bulbs apart (don’t remove the skin from cloves).
Put garlic cloves in a pot. Add olive oil until it just covers cloves.
Simmer on low heat for 1 hour.
Remove garlic cloves from oil by straining through a colander or sieve or by using a slotted spoon.
You now have two options:
1- Serve as is: leave garlic confit whole and serve in a bowl or directly on serving plates.
2- Crush each clove to remove garlic purée. Combine with mashed potatoes or spread on bread or meat.
Store garlic confit whole or as a purée for several days in the fridge or freeze it for future use!
