  • 3-4 fresh garlic scapes
  • 2 diced tomatoes
  • 1 lettuce
  • Olive oil
  • Balsamic vinegar
  • Salt and pepper, to taste

  • Preparation

  • Cut garlic scapes into about 1-inch pieces.
  • Steam garlic scapes for a few minutes. Check if done by piercing them with a knife or by tasting (when not cooked enough, garlic scapes are spicy and when overcooked, they get mushy).
  • In a large bowl, combine garlic scapes, lettuce and tomatoes. Season to taste with olive oil, balsamic vinegar, salt and pepper
