Artichoke hearts and ham salad with black garlic vinaigrette

Ingredients
Salad
- 170 ml jar marinated artichoke hearts sliced
- 150 g ham slices
- 4 to 6 cups spring mix
Vinaigrette
- 6 organic black garlic cloves minced
- 2 tbsp cider vinegar
- 1/3 cup olive oil
- 1 tsp Dijon mustard
- Salt and pepper
Preparation
- In a deep bowl, combine all the ingredients for the vinaigrette. If you want a more homogeneous vinaigrette, use a hand blender. Otherwise, whisk vigorously.
- In a soup plate, arrange the spring mix, artichoke hearts and nicely folded ham slices.
- Drizzle with the vinaigrette and serve with bread and cheese, if desired.
