Artichoke hearts and ham salad with black garlic vinaigrette

Ingredients

Salad

  • 170 ml jar marinated artichoke hearts sliced
  • 150 g ham slices
  • 4 to 6 cups spring mix

Vinaigrette

  • 6 organic black garlic cloves minced
  • 2 tbsp cider vinegar
  • 1/3 cup olive oil
  • 1 tsp Dijon mustard
  • Salt and pepper

Preparation

  • In a deep bowl, combine all the ingredients for the vinaigrette. If you want a more homogeneous vinaigrette, use a hand blender. Otherwise, whisk vigorously.
  • In a soup plate, arrange the spring mix, artichoke hearts and nicely folded ham slices.
  • Drizzle with the vinaigrette and serve with bread and cheese, if desired.
