Black garlic brownies

  • 4 organic black garlic cloves, peeled
  • 2 tbsp boiling water
  • 3 large eggs, tempered
  • ¾ cup brown sugar
  • 1 tsp vanilla extract
  • ¾ cup softened unsalted butter
  • ⅔ cup cocoa powder
  • ½. tsp salt
  • ½ cup all-purposed flour


  • Preheat the oven to 350°F.
  • Finely chop the black garlic and put it in the bowl of a mortar. Add boiling water and crush the garlic with the pestle until it becomes a liquid puree. Set aside.
  • In a bowl, mix the cocoa powder, salt, and flour. Set aside.
  • In a large bowl, using an electric mixer, beat the eggs for a few minutes until they become foamy. Incorporate the brown sugar. Add the vanilla extract and butter.
  • Using a wooden spoon, mix in the dry ingredients and black garlic puree until the mixture is smooth.
  • Line an 8x8-inch baking dish with parchment paper and pour the mixture into it.
  • Bake in the oven for 22 minutes.


Serve accompanied by a scoop of ice cream or vanilla yogurt, or a nice tall glass of milk!
