SALTED MUFFINS WITH BLACK GARLIC, LEEKS AND CHEESE

Serves : 12 muffins

INGREDIENTS

  • 1 leek thinly sliced
  • 1 tbsp olive oil
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • 2 eggs
  • 1cup milk
  • cup vegetable oil
  • 1 ¼ cup Canadian Swiss cheese grated
  • 6 organic black garlic cloves minced
  • Salt and pepper

PREPARATION

  • Preheat oven to 350 °F.
  • Heat olive oil in a skillet and sauté leeks for 5 min. Add salt and pepper. Set aside.
  • In a large bowl, combine flour, baking powder, baking soda, salt and pepper and mix well.
  • In a bowl, whisk eggs, then add the vegetable oil, milk, minced black garlic and grated cheese.
  • Pour the wet ingredients over the dry ingredients and combine until smooth.
  • Pour into muffin cups lined with paper liners.
  • Bake in the oven for 25 minutes.
