SALTED MUFFINS WITH BLACK GARLIC, LEEKS AND CHEESE

INGREDIENTS
- 1 leek thinly sliced
- 1 tbsp olive oil
- 2 cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp baking soda
- 2 eggs
- 1cup milk
- ⅓ cup vegetable oil
- 1 ¼ cup Canadian Swiss cheese grated
- 6 organic black garlic cloves minced
- Salt and pepper
PREPARATION
- Preheat oven to 350 °F.
- Heat olive oil in a skillet and sauté leeks for 5 min. Add salt and pepper. Set aside.
- In a large bowl, combine flour, baking powder, baking soda, salt and pepper and mix well.
- In a bowl, whisk eggs, then add the vegetable oil, milk, minced black garlic and grated cheese.
- Pour the wet ingredients over the dry ingredients and combine until smooth.
- Pour into muffin cups lined with paper liners.
- Bake in the oven for 25 minutes.
